- Extraction, purification, spectroscopic characterisation (HPLC-UV, MS and NMR) of compounds from natural matrices (medicinal and fruit plants, biomass, food waste, etc.).
- Study of the antioxidant activity and inhibition of metabolic enzymes by natural and synthetic compounds or extracts enriched in polyphenols of natural origin.
